Culatta produced from selected Italian pork thighs. They are trimmed choosing the noblest part, removing the flake so the slices remain sweeter and marbled.
Unlike traditional culatello, it retains the hips, sugnatura and fat resulting in a sweeter and softer texture.
Matured a minimum of 10 months.
