The filling of the Bologna tortellino features a strong presence of Mortadella Bologna IGP and Parmigiano Reggiano DOP, followed by prosciutto and cooked meat; the seasoning is based on salt, pepper and nutmeg.
Also required to be identified as the real Bologna tortellino made by the sfoglina are: very small size, coarse dough, high percentage of eggs (33%) and thin sheet of pasta.
