Fine pork seasoned with wine and pepper, for this peasant salami born in Norcia but expatriated in Rome since the Middle Ages. Today it is known as the "Roman corallina" and is always present on the Easter tables of central Italy. The curious name derives from the "coral" casing that wrapped this salami before aging; The color of the slice remains bright red just like a coral. The taste is sweet and delicate.
