Tuscan Pecorino cheese of superior quality: the raw material (only sheep's milk from Valdichiana) is combined with the refinement in jars under ashes. The powder is covered with a layer of ash that was used in ancient times to preserve cheese from pathogens.
It is aged for 100 days, it does not harden because the ash keeps it soft and preserves the taste of fresh milk, it is never salty.
The paste is soft and slightly straw-yellow, the taste is persistent.
