Classic cheese of the Sardinian pastoral tradition. It has a considerable content of soluble proteins and essential amino acids, calcium and phosphorus useful for the nutrition of children and the elderly.
The peculiarity of Fiore Sardo PDO is that the sheep's milk is processed raw and no later than 3 hours after milking only from certified farms controlled by the consortium. Matured to disciplinary over 105 days.
