It is a DOP from the Val di Fassa, produced by a small dairy in Moena.
It is made with raw milk. Cheese aged at least 90 days. The semi-cooked dough is elastic and light in colour, with small-medium holes. Its aroma has sharp notes, with hints of grass and ripe fruit. Robust flavor, intense, with noticeable bitter aftertaste.
Our size of about 3kg vacuum is designed for the service. The product contains raw milk, not suitable for children.
