Very sweet and with a very original cut, it follows a long and difficult preparation. Bagged and bound by hand as per tradition, offered in many sizes: 30 cm, 60 cm or 120 cm with a wooden cutting board.
The most valuable part of the pig, the fillet, is processed with the spices of traditional speck. The raw meat is massaged with a mix of salt, pepper and spices, and then lightly smoked au naturel to give it the taste and smell of a small carpaccio.
Delicate in both taste and aroma, but extremely tasty. On the palate it is super soft and melt-in-your-mouth.
